Palo Duro Sunrise
8 eggs, beaten GRAVY:
1 T. butter 3 T. butter
1 c. cooked sausage 3 T. flour
1 ½ c. grated cheddar 1 ½ c. milk
Gravy salt & pepper
1 T. fresh chives
Cayenne pepper (optional)
In a skillet, cook eggs in butter until partially set. Spread eggs in an even layer over bottom of lightly greased 9x13 glass dish. To make gravy, melt butter in saucepan, add flour, and stir until well mixed. Slowly add milk, stirring constantly until thickened to gravy consistency. Sprinkle sausage over eggs, followed by 1 cup of cheese, gravy, then remaining cheese. Top with chives, and sprinkle lightly with paprika and cayenne pepper. At this point the dish may be covered and refrigerated overnight.
Bake at 350° for 30 minutes or until bubbly and cheese is melted. Serve immediately.
